After sitting on the shelf, even for a relatively short time, the high glucose content makes Macadamia honey vulnerable to crystallization.
This honey, whether used as a topping or used for baking, is exceptional. It is one of the best honey to be consumed straight from the bottle, with its exquisite sweetness and smooth texture. It goes scrumptiously well with fruit, ice-cream, vegetable salads, toasts and herbal tea.
If you want to use it as a tea sweetener or a cooking ingredient, however, it's going to be an expensive item. But, if you want to reward yourself with waffles, yoghurt or ice cream, then it's worth paying for it.
